In the late 1800s, Alabaster was a small town in central Alabama. The townspeople were responsible for many of the local businesses and they also produced their own coffee. One of the most famous cafes in Alabaster was The Coffee House. This café was known for its delicious coffee and its extensive menu. The first coffee beans were roasted by a man named John Fitch in 1807 in what is now downtown Alabaster. In 1815, another man named James Harper began roasting coffee on premises. By 1825, there were five different roasters operating in Alabaster. By 1830, The Coffee House had closed down and all of its coffee beans had been destroyed except for one that John Fitch brought back to his shop and roasted again. In 1865, Elijah Wood bought The Coffee House from John Fitch and continued to operate it as a cafe until it went out of business in 1903. However, Elijah Wood's descendants continue to run the business today as Elijah's Coffee Shop LLC. Elijah Wood's legacy lives on through his son-in-law, Bruce Ewing who has operated the store since 1978. In 2016, Bruce Ewing was inducted into the Alabama Coffee Hall of Fame!

Today, Alabaster has become one of the most developed areas in the metropolitan area with many businesses and homes available for purchase or rent throughout its boundaries

However, since then, Alabaster has regained some of its former prominence as a cultural center within the Birmingham metro area as well as being an attractive location for housing development both inside and outside of downtown Birmingham
