The history of small batch coffee goes back to the early 1800s in Highland Park, New Jersey. There was a grocery store on Main Street called The Coffee House that served coffee and other refreshments. In 1836, Nicholas Rojas opened a grocery store on Second Avenue in Highland Park and began selling small batches of beans from his home. Over time, other businesses followed suit and the grind size and flavor preferences of individual customers became important factors in how these stores operated. In 1915, Frank Binder started making coffee at his family's original bakery on Ocean Avenue in Highland Park. He continued to make small batches of coffee until 1982 when he sold his business to Harry Fenton. At Harry Fenton's store, small batch coffee became an important part of the shopping experience because each customer could purchase a bag or case of their favorite bean species at any time they wanted. In addition to providing a unique product experience for consumers, Harry Fenton also ran the store as a microenterprise with limited resources that allowed him to keep prices low while still offering high quality products. This model eventually evolved into what is now known as Local Hands Coffee Company (LHCC). LHCC remains one of the largest smallbatch coffee companies in the world today with over 100 locations across America and Europe.

They brought their culture with them and founded what is now Highland Park on land that they had bought from the Native Americans in 1795. The Scots-Irishtowns of Perth Amboy and East Brunswick were merged into Highland Park on February 17, 1911. The community's growth was due to its location near three major railroads – the Newark–Elizabeth Railroad (NE), the Trenton Railroad (TN), and the Morristown Junction Railroad (NJCR). These transportation arteries made it easy for businesses to get goods to and from customers across southern New Jersey and upstate New York. In addition, Highland Park's close proximity to Princeton University made it an attractive place for students seeking education or work opportunities.

Highland Park is a borough in Atlantic County, New Jersey, United States. The population was 5,878 at the 2010 census. Highland Park was founded on Sept. 15, 1884 by Scots-Irish immigrants as part of the Bergen Township area north of Perth Amboy. The original village site was located in what is now Highland Park's east side and included only the hamlet of Glassell and a few scattered homes. The first settler to arrive in this area was John McNamara from Ireland who arrived on horseback on September 15, 1884. He soon married Herendina Hughes from Scotland and started to farm near where present day Highland Park Boulevard meets Routes 9 southbound and 10 westbound. In 1885, land east of Glassell were annexed into Highland Park which made it possible for some more settlers to move into this new townsite. On November 7th of that year, a group of men led by local resident James Hickey laid out a plat for the township center with blocks bounded by Maple Ave., Broadview Ave., Patriot Rd., Hackensack Rd., Edison Dr (then Hastings Ave.), and Winthrop Ave.. This new townsite would come to be known as "Old Highlanders". On December 3rd 1885, groundbreaking took place for the first Presbyterian church in what is today Highland Park - Zion Presbyterian Church. That same year saw the opening of Highland Park's schools - Lighthouse School (now Lehman Catholic High School), Scotch Plains American Legion School #1 (now Seton Hall University), and Scotch Plains American Legion School #2(now Childershock Elementary). In 1886-87 there were also several small businesses established in what is now Highland Park including J & E Grocery Company (#5), John Fenton Boot Co.#2 (#2), A&P Store #3 (#3), Mrs Sweeney's Bakery (#4) and Mr Sweeney's Meat Market#5(). Finally, on October 9th 1888 when part of Bergen Township became independent as Hudson County due to statehood efforts - all public services within Bergen Township were transferred to Highlands Borough becoming one municipality under one roof! The community rapidly grew during these early years with many families moving here from other parts of Atlantic City or Jersey City; many stores were opened up along with homes which continued being built until shortly before World War II when Affiliated Engineers manufactured most all construction materials used within America during that time period so much so that entire towns like Ridgefield Village NJ had their own paper mill producing products lasting until well after those factories closed! Some notable residents during this time include: Mayor John McNamara (1886-1927); Assemblyman Julius Rosenwald (1889-1920); Judge Edward Slingerland (1892-1904); Dr James Phelan (1894-1900); Mrs Jane Daly McDermott ('Janey') ('Daly' being an Irish name meaning 'Fair'); Superintendent Roman Czartoryski (1903-1910). Many important events throughout our history have taken place at Old Highlanders such as: St Patrick’s Day Parade 1911; Italian Day Parade 1915; Easter Sunday parade 1916; Labor Day parade 1916; Fourth Of July parade 1919; Christmas pageant 1923; The Great Migration 1927 – 1951
Highland Park was founded in 1819 by Scottish settlers. The first post office located here was established in 1824. Highland Park grew rapidly during the early 1800s as a result of its location on the border of two large estates, oneowned by John D. Rockefeller and the other by Cornelius Vanderbilt. In 1828, Highland Park became incorporated as a township. The population of Highland Park grew rapidly during the 19th century due to its location on horseback riding and hunting trails, which attracted Cadillac drivers and others looking for access to new land. During World War I, Highland Park served as an important naval depot for New Jersey. In 1939, whenaponements were made throughout the United States following World War II, Highland Park became home to nearly 5,000 soldiers who were stationed at various military bases in New Jersey and Pennsylvania. After the war ended, many of these troops returned home and their families moved into town; however, some remained in town until they left for retirement or relocation elsewhere during the late 1960s and 1970s. In 1976, Highland Park experienced dramatic changes when it became known as "The Town That Took On Wall Street." As a result of this change in name, many businesses closed down or relocated operations because they were fearful that their names would be taken away from them if their business locations got too close to Wall Street again- something that never happened though some businesses did move out west after being affected by this gentrification trend (e.g., Starbucks).
