In 1814, General James Wilkinson built a sawmill and store on the property and named it Wilkinson's Coffee House after himself. In 1837, George Prentice founded Gourd Neck Coffee House which became one of the most successful local businesses in New Jersey. By 1865, Red Bank had an estimated population of 508 people and its first grocery store. The town was founded on August 22, 1788 by Colonel John Woolridge and his wife Maria Woolridge as a postern gate stop on the Atlantic Ocean road from Princeton to Morristown. Red Bank has been an important cultural and political center in Hunterdon County for centuries. It was the site of the first public school in this county in 1792 and it hosted the first annual meeting of the NJ State Legislature in 1824. In 1866, Red Bank became part of Monmouth County when that county was formed from parts of Middlesex and Hunterdon counties. The town's rich history has been documented by local residents and historians alike who have collected oral histories, materials from local businesses and archives dating back to early 1800s. Red Bank, New Jersey is a town in Middlesex County, New Jersey, United States. The population was 34,890 at the 2010 census. It is the county seat of Middlesex County. The name Red Bank comes from the color of its brick buildings and roads. The first white settler in what is now Red Bank Township was George Mercer in 1795. The township was organized on March 3, 1837. The first post office in Red Bank Township was called Northampton Place on October 25, 1837. On November 16, 1853, the townships of South Brunswick and Union were merged into Red Bank Township. In 1886, the borough of North Brunswick became part of Red Bank Borough; however this merger did not take place until 1902 due to objections by South Brunswick residents who wanted their own boroughs separate from those in neighboring North Brunswick and Uniontownships). In 1920–21, an act to create a city within Middlesex County failed because it required a two-thirds vote by all municipalities within Middlesex County before being passed (the only municipality to not pass was Newark), but it did pass as a referendum for citizens of Newark who had "elected" then-mayor John Jaffe as mayor without voting in their respective wards (Jaffe later served as mayor of Newark). In 1923–24 there also was another referendum asking whether or not to adopt a new charter for the city which failed by just one vote (although this charter would have allowed more than one million people living in Newark outside its limits). In 1927–28 there were several referendums regarding municipal boundaries with little success; finally on February 14th 1928 resolution authorizing the creation of Garden City – an enclave consisting primarily of Italians – passed with 63% approval despite objections from many members of both communities who felt that Garden City should be based solely on Italian interests rather than incorporating allIED Engineser/ businesses etc., which would have given Garden City jurisdiction over both neighbourhoods - making it effectively an independent city)
