Over time, larger roasters began to enter the market, but smaller businesses continued to operate until the late 1800s when large companies took over. In 1868, local influential citizens commissioned surveyor George Aiken to create a plan for improved transportation between Albany and Schenectady by creating a road from Geneva to Troy via Auburn and Saratoga Springs. The Erie Canal was completed through Geneva in 1869; as a result, trade increased along the route and new businesses sprang up around the canal stopoffs such as Mr. Barber's operates at present day Third Street (then Elmira Road). A fire destroyed most of downtown Geneva on December 5th 1984 during an outbreak of arson that swept across Upstate New York
