The town was founded by a man named George Hill and his family. They started roasting their own beans and selling them from their home. In 1907, George Hill opened what is now called "The Coffee Shop" in Hereford. He served as the proprietor until his death in 1966. His son, Charlie Hill, continued the business until it closed in 1990. Since then, many other businesses have cropped up around here that sell tactical coffee including The Coffee Shop Café & Bakery (1992-present), Boka Cafe (2002-present), and Joe's Coffeehouse (2006-present).

The first settler in what became Hereford was James Witherspoon, who arrived in 1853 from Kentucky. He erected a cabin on the north side of town. In 1865, Hereford residents decided to secede from Tyler County because they felt that their taxes were too high. In 1886, Hereford had an issue with water rights due to its location near Springwood Creek on the San Jacinto River flood plain. A group of farmers formed an organization to raise money for a dam project while still depending on spring water from nearby Springwood Creek. They succeeded and built the first dam in herehistory on December 5, 1886. In 1906, they destroyed another dam which had been built by previous owners without proper planning or engineering - this one caused floods that affected many communities downstream including Austin and Lufkin
