Coffee first appeared in Highland in 1847 when two Frenchmen named Gabriel and Jean Baptiste Chardonnay decided to settle in the area. Their decision was based on their belief that coffee would be a major factor in helping them become successful businessmen. The Chardons started out planting small amounts of coffee trees near their home town of Thionville. Over time, they became well-known for their quality beans and began exporting their product all over the world. By 1862, they had founded another company called Laing & Company which exported its beans all over the United States and Europe. During this time, there were many advances being made in coffee production techniques. For example, Charles Schultz started using mechanical espresso machines in 1956 which helped make high-quality cafés available at a much lower price point than ever before. Additionally, research into genetic modification helped create more robust and delicious coffees which continues to this day.

In 1907, after years of discussion and planning, Highlands became an independent municipality with its own government and school district. In 1916, it became known as Highland Park when it annexed part of Midland County's largest town – Lubbock – making it one entity with local governance for all residents within its boundaries not just those living within its limits adjacent to Highland Park itself (the annexed towns were Lubbock proper and Dickens). In recent decades, Highlands has seen steady growth both economically and socially due to two primary factors: its location near major metropolitan areas such as Amarillo and Dallas-Fort Worth; as well as its significant contingent military presence stationed throughout Central Texas providing access to jobs in technology or other high-skill industries; together they have helped increase median household income by over 50%, while job density has increased significantly since 2000 alone making Highlands one of the fastest growing communities in North Texas trap

It lasted until 1865 when President Abraham Lincoln ordered General Andrew Johnson to quell the rebellions and take control of the county. In 1870, Highland annexed what is now Dallas County from Kaufman County. Highland is located on both sides of Interstate 10 and has a total population of 508 according to the 2000 census results. The community dates back to at least 1870 when people from nearby Fort Worth moved into what is now Highlands because they could not find another place to live nearby on their farmlands that would allow them to keep dogs with them while hunting deer or turkey during open season. The first post office in Highlands opened in 1875 and served area residents until 1907. In 1902, a school named after Mrs John Ahern (1827-1905) opened in Highlands which continues today as Highland Elementary School
