In 1924, John Sauer opened his own roastery and café here. The Brown Deer, Wisconsin Cheese culture goes back to 1847. The first cheese factory was built in the town of Brown Deer in 1847 by German immigrants. The factory produced a variety of cheeses such as Brie, Cottage Cheese, and Gouda. The company continued to produce cheese until it closed in 1951. Cheese production began in the United States around 1830 when French Canadians started making cottage cheese from milk that they collected from their farms. In 1875, a group of Englishmen who had immigrated to America decided to start a dairy farm on White River Island near Detroit, Michigan. They named their farm “Brown Deer” after the local deer population that they hoped would provide them with food and resources for their new business venture. While there are many different types of Wisconsin cheeses – including gouda and blue cheese – brown deer is perhaps most famous for its feta cheese. Fetas are made from sheep’s milk and are often served as part of a buffet or salad course at weddings or other events where goat’s milk cheeses may not be appropriate or practical.

The Brown Deer area was first settled by the Sauk people in the early 1800s. The town of Brown Deer was founded in 1853, and it is still a small community today. The town was named for Isaac Brown, an early settler.
