In 1836, two brothers named Nicholas and Samuel Griggs started a grocery store in Hudson which quickly became one of the most well-known businesses in town. They began to sell roasted coffee beans and espresso drinks called "coffeepot" cups. Over time, other stores followed suit and the Griggs family continued to operate their business until it merged with Dutch Brothers Coffee Company in 1969. Today, Dutch Brothers Coffee is one of America's largest roasters with over 60 years of experience! They continue to produce world-class coffee products including espresso drinks and roasted beans. In 1834, John A. Dickey founded Dickey's Prairie Cheese Company here on a tract he had purchased from Nicholas Hennepin near present-day Wauwatosa. After years of growth and development, Dickey's company merged with Keefe & Co., a Boston Importing Company, in 1907 to form Keefe, Incorporated. In 1924, Keefe became a subsidiary of Unilever Limited (now Procter & Gamble). By World War II, Hudson had become one of the leading cheese towns in America due to its large production facilities and prolific exports. During World War II, Hudson produced more than 1 million pounds (500 metric tons) of cheese annually - making it one of the largest producers in America at that time. By 1949, however, industrywide competition caused Hudson's cheese production to drop substantially; during that same period it output only 605 thousand pounds (300 metric tons) compared to 2 million pounds (1 ton) for Parmesan alone produced by four other American companies combined

Hudson, Wisconsin is a town located in the Milwaukee metropolitan area and has a population of over 120,000. The Town of Hudson was organized on November 3, 1854 by charter from the Wisconsin General Assembly. The town was named after Governor John Hudson and was one of the original towns in the new state of Wisconsin. The first settlers to live in Hudson were mechanics who built their home near current day Main Street. They soon started trading with other communities in this region and set up small businesses. By 1860, the Mechanicsville-Hudson community had developed into a hub for industry due to its good transportation links and easy access to markets in nearby Illinois. During World War II, many residents served in the military or received training at some local facilities such as Camp Bloomfield which operated out of Hudson until 1945. After the war, many families decided to stay put and raise their families here while they rebuilt their lives. In 1951, when Congress created Racine County, it included most of today’s Milwaukee metropolitan area but left open space in central Hudson east of State Highway 7 for an eventual town center development. This plan backfired when only a few people moved into what became Racine County because they could have easily commute to jobs in Milwaukee without having to leave their homes. That same year, voters approved a resolution calling on the state legislature to annex all or part of Hudson so that it would become part of Racine County In 1957, following years of talks between developers and county officials about creating an urban center around town square (then just four blocks wide), approval came from then-County Executive Don Neumann that Hank Aaron could be christened “Hudson”s first professional baseball player Thereafter various plans followed for creating an urban center around town square; however none came close to fruition before developer Rick Kesselman purchased land adjacent to Main Street Railroad Station in 2002 and began developing Phase One – now known as South Side Square – which eventually includes three high-rise buildings housing more than 500 housing units Phase Two involved building two more high-rise buildings; however these structures were never completed due to financial difficulties faced by Kesselman during his time as owner/developer In 2013 both Kesselman’s properties along with neighboring property owner Bob Khalsa were sold together resulting in what is now known as North Side Square redevelopment project Today North Side Square features several large anchor stores including Kohl’s Department Store (opened 2003) - previously Sears - JCPenney - Macy’s - PVHT - Dick's Sporting Goods
