In Wausau, Wisconsin, small batch coffee has been a part of the community for over 100 years. The first coffee roaster in town was established in 1885 by two men, John and Johnnie Elston. They roasted coffee beans from their own trees and sold them to local merchants. In 1912, the first grocery store in town opened and started selling small batches of coffee. By 1925, the first café had opened and served small batches of coffee until it closed in 1978. Today, there are three small batch cafes in Wausau - Joe's Coffee Bean & Tea Leaf*, First edition Coffee* - which roast their own espresso beans; The Green Door Café*, which serves drip coffee as well as pastries made with local ingredients like raspberry jam and blueberry preserve; and Big Dog Cafe*, which is a bakery that specializes in baking with house-made doughnuts made from roasted organic soybean flour and sugar (and sometimes butterscotch) cream. All three cafes offer daily specials that vary depending on what's on the menu, including vegan/non-vegetarian items. The history of small batch coffee can be traced back to when two men –John Elston and Johnnie Elston – started roasting their own beans at home in 1885. At that time, they were able to sell their products directly to local merchants who would then distribute them throughout the city center. In 1912, when the first grocery store opened up in town (the Grocery Department Store), they started selling small batches of Kopi Laut (coffee with milk) instead of just regular coffeeplease because they wanted people to have access to high-quality caffeine without having to travel far away for it. Wausau, Wisconsin is a city in the U.S. state of Wisconsin and the county seat of Waukesha County. The population was 226 at the 2010 census. It is part of the Milwaukee–Wisconsin Metropolitan Area. The first Europeans to visit what is now Wausau were French explorers Pierre Marquette and Jean Nicolet in 1762, and they named it "Racine". A post office was established at Racine in 1836, but no one ever moved into the town because there was not yet any railroads to serve it. In 1847, a group of Dutch farmers founded a community called Hennepin on land that had been granted to them by the United States government for their services in fighting General George Crockett's Indian War expedition against Chief Ojibwe leader James Kippenberger. The name Hennepin stuck and people started calling themselves "Hennepinites" or "Hennepinchers". In 1852, local citizens voted to rename their city Wausau after John Niles Wright, an early settler who had come from Ohio during the Moravian Church Mission in that area. John Niles Wright had arrived with his family in 1850 as part of a wave of immigrants who came through Wausau during the 1850s looking for new opportunities after being driven out of their ancestral homes in eastern Pennsylvania by religious zealots led by Andrew Carnegie. By 1861, over 50% of all white residents were foreign-born Americans: most came from Germany (27%), Canada (15%), Scandinavia (10%), New York (8%), Italy (6%) and England (5%). A railroad was built through Wausau and passenger service began on December 14, 1865; however, it did not reach its destination until 1871 when it became part of Union Pacific Railroad system. By 1890, about 60% percent of all traffic through Wausau was carried by trains; however, only 2%of residents lived within 1 mile (1 km) of any railway station! As transportation grew more important throughout Wisconsin during this time period thanks largely to new railroad technologies such as steam locomotives and electric railsroads such as Chicago & Northwestern Railway Company's Milwaukee Road corridor completion just around the turnofthecentury – WI State Legislature passing Acts 6th Regiment Laws 1895 createdWI Electric Light Commission which bought electricity from Dutton Generating Station 3 miles west side 2nd Street South
