Some of the earliest evidence of coffee being brewed in Artesia can be found in April 14, 1845 when a group of settlers on Rancho San Pablo discovered roasted beans while tending to their livestock. Three years later, on October 3rd, 1849, JA Saunders opened the first roastery and grocery store in what is now the heart of downtown Artesia. In 1924 J Hennigan reopened his original cafe at 5th and Market Streets after moving from Los Angeles. The artesian water that flowed through Rancho San Pablo was used for brewing coffee until about 1865 when an aqueduct was constructed nearby. By 1890 there were over 30 cafes and stores serving coffee within a two-mile radius. One of the most famous Coffee Roasters in town was The Argyle House which operated from 1922-1927 out side of downtown on First Street near Paseo de la Reforma. This establishment provided local favorites such as Dutch Bros., Donut Shop & Cafe (later known as Joe's Coffee), and Egg Foo Young which continue to serve up delicious java today! Other notable businesses located around this time include The Rookery at 6th and Main Streets (now closed) and Brownies by Mrs. Kapp at 9th Street between Broadway & Market Streets

The first Europeans to visit Artesia were Spanish missionaries in 1821. The town was platted in 1847 by Hiram Sutter and James Marshall. A post office called "Aresia" was established in 1852, and became a village in 1862. When the Central Pacific Railroad reached Artesia in 1886, it created a boom in business that lasted until 1893; during this time the population swelled from 1,500 to 10,000 people. In 1907 Artesia organized itself as an independent municipality and adopted a constitution under which it governance is unicameral with three elected officials: Mayor/President; City Councilors/At-Large; and School Board members/Supervisors (four per school district). In 1916 a new water tower was built on Main Street by the then-Mayor John Daly for $2,650.00 and given to the community by Southern Pacific Railway President Charles Evans Hughes as part of his gift to commemorate their centennial anniversary of incorporation into the railroad system. In 1931 Artesia annexed portions of Butte and Visalia Counties for economic reasons due to rapidly growing agricultural production there combined with limited lumber resources within Kern County at that time. The annexation caused some concern among residents about how such large changes would affect their political representation on local government bodies should they choose not to join what had become known as "the big city." However annexation passed without objection from most residents once Community Services District No. 2 was formed with authority to manage all services within two counties while still remaining an unincorporated community governed through its own ordinances and traditions unconnected with larger jurisdictions outside of its borders—a model that continues today albeit with less direct control over services offered than prior incarnation The current mayor is Democrat Rudy Martinez who took office on January 1stanober 20th 2017

The first post office in the town was established in 1848. In 1850, Artesia had a population of just seventy-six people. By 1860, the population had increased to one thousand five hundred people. In 1865, Artesia became part of Mexicali County and in 1887 it became a city under statehood.
