The first coffee house in Bakersfield was built on Third Street in 1876 by George Wetherbee and others as a refreshment stop for travelers on their way to209 Chestnut Street North where they bought drinks from three men who later became known as "The Three Musketeers." In 1880, J. C. Whitney opened his own coffee house and soon began selling coffee to passengers on wagons stopping at his rancho near today's Interstate 5 south of downtown Bakersfield. Whitney quickly became known as one of Bakersfield's leading merchants and entrepreneurs. In 1895, he founded what would become known as Whitney Coffee Company Ltd., which continued to exist until it merged with Starbucks Corporation in 2006

The area now known as Bakersfield was inhabited by Native Americans for thousands of years before Europeans began arriving in large numbers to explore this part of California. In 1821, Mexican land grants were made to three brothers - Jesús Cisneros, Don Carlos Valencia and José Antonio Reyes - who named their holdings Rancho Santa Anita after Mount Laurel outside Philadelphia, Pennsylvania. The first post office was established in 1827 at what is now called First Street and Mission Avenue in what is now downtown Bakersfield. At its peak during World War II, Bakersfield had a population of over 120,000 people living within a radius of 10 miles (18 km). Baker City has been a town since it was founded on November 3, 1850 by Captains George Aikens and John Sutter as part of Rancho Animassa grantee Captain George Aiken's speculation that he could find water power for his millrace near present day downtown Bakersfield. On July 29th 1850, General Mariano Vallejo granted Rancho Santiago de la Sierra to Juan José Cárdenas from Rancho San Vicente south of La Junta Creek; this rancheria became today's townsite Alcoa Park east of I-5 about 8 miles (13 km) northwest of downtown Bakersfields original location on High Street between Main and 14th Streets which still stands today as Pioneer Square

The two brothers founded an agricultural colony that would become one of the most successful wine-growing regions in California. In 1846, Mexican traders discovered gold near what is now Fresno and began trading with miners there; this led to increased immigration into California from Mexico and also led to various name changes for various settlements around Gold Rush era: Benicia (1848), Nacogdoches (1849), Yreka (1850) etcetera. By 1852, all but five townships within Kern County were served by Wells Fargo Road leading west from Sacramento through Marysville then north past Yosemite National Park before terminating at Big Bear Lake near San Bernardino County line. At this time plaza de arriba or Town Square was located on Main Street between First Avenue and Broadway where today’s Cathedral of Our Lady Of Mount Carmel sits
