Fresh roasted coffee is a centuries old tradition in Clayton, California. The first coffee beans were ground and roasted by the early Spanish settlers in the area. Coffee was traded through the area back then and it was used to make different types of goods like wine and chocolate. Today, fresh roasted coffee is still an important part of the community’s culture! Clayton has had a relationship with coffee since before people even knew what it was. In 1827, Captain John C. Frémont explored the Sacramento Valley and discovered Coffee Creek running through it. He named the creek after his friend and mentor, General Manuel Arguello y Costilla. After finding out about Coffee Creek, Captain Frémont started bringing beans from Mexico City to sell in Sacramento. In 1849, while exploring Mono Lake, prospectors found some of the best coffee in all of California when they stumbled upon a small stream called Pulaski Wells near present-day Redding (Clayton). The local farmers decided to start growing their own coffee because they could now get better prices for their beans than they could from Captain Frémont or anyone else coming through town. The first roasts were made on November 1st of that year by Juan Ortiz at his farm on Holcomb Avenue in Clayton just east of downtown Clayton today (now known as Ortega Boulevard). This event is generally considered to be when Clayton got its start as a city!

Clayton, California is a small town in Kern County, California, situated on the eastern edge of the Mojave National Preserve. The community was founded in 1887 by citizens of Tehachapi and Bakersfield. Clayton's name is derived from two words: Clanton and Henrico. The first post office at Clayton opened in 1887. The population of Clayton peaked at 1,200 in 1920 but plummeted to just over 400 by 1940 due to World War II and then increased sharply following the passage of Proposition 9 in 1978 which granted voting rights to all residents over 21 years old. However, since then the population has slowly declined as a result of various factors including joblessness and crime rates. In 2000, Clayton had an estimated population of just under 500 people; however this number has decreased significantly since then as well due to various factors such as Joblessness and Crime Rates
Clayton was founded in 1865 as a small town in Kern County, California. The community became an agricultural center due to its location at the intersection of state Route 36 and U.S. Route 50. In 1876, Clayton incorporated as a city and began to grow rapidly. The city's population reached 10,000 by 1904 and 20,000 by 1912. Clayton experienced significant growth during World War I, when it became the largest military base in the Western Hemisphere. After the war ended, the city grew even faster, reaching 30,000 by 1924. The economic decline of the 1930s led to a loss of jobs in Clayton but also helped spur new development throughout the area around the city limits. By 1940, Clayton had reached 60,000 people and was one of California's leading cities. However, social unrest and economic problems once again caused stagnation and decline during the 1960s and 1970s; however, recent revitalization has seen some resurgence in business activity within Clayton dating back to before its incorporation into City Limits
