The first coffee farm in Encinitas was founded in 1916 by Theodo Fischer and his brother-in-law, Gustav Eichel. The two men purchased a 10-acre plot of land near the town of Encinitas and began to grow coffee. In 1938, they sold their business to the Pacific Coffee Company. In 1945, the company merged with Koffee Klatch to form the now famous Koffee Klatch Corporation.
Encinitas is a small city located in southern California. The population was 50,388 as of the 2010 census. It is part of the San Diego-Carlsbad-San Marcos Metropolitan Statistical Area. The site where Encinitas now stands was first inhabited by the Tongva people and later by the Chumash. The area that would become Encinitas was purchased from them in 1821 by Francisco Paloma, who named it Rancho San Miguel de Atascadero. In 1851, palomares bought another parcel of land east of Encinitas from Juan Bautista Alvarado for $4,000. In 1863, General Antonio Lopez called for volunteers to help him build a road from Tecate to Los Angeles through what is now El Cajon and Encinitas. The citizens of Encinitas donated land to be used for this purpose and on April 20, 1863, the town was officially founded when several hundred men laid down sod and built their homes. The first post office opened in 1865; it was renamed Rancho Santa Fe in 1896 after Santa Fe County became part of California. By 1900, there were 707 residents living in Encinitas proper and 413 residing within its annexed limits (now known as Mission Beach). On December 6, 1907, during World War I munitions production at Point Loma Naval Air Station on San Diego Bay some 8 miles northeast ofenciniata came loose but without injury to naval personnel or material being carried off shore; however this event set off an airfield campaign lasting weeks which resulted in over 100 aircraft destroyed or damaged with no loss human life aboard any vessels afloat or ashore

Encinitas, California is a small town in San Diego County, California. The population was 8,032 at the 2010 census. It lies on the eastern edge of San Diego County and extends into Orange County to the east and north. The townsite was first settled in 1853 by Mexicans who arrived from Texas. In 1857, Encinitas merged with Mission Trails Village to form what is now known as Encinitas Townsite (now part of Imperial Beach). The name Encinitas comes from "en" meaning "in" and "citos"meaning "towns". The original inhabitants of Encinitas were Indians who had been living there for many centuries before Spanish colonists arrived in 1769 and started building adobe Villages around missions Santa Margarita de la Laguna (founded in 1699) and La Jolla (founded in 1765). La Jolla was then known as Rancho Rinconada or Rancho Viejo. In 1857, the Mexican-American community of Mission Trails Village formed when two groups of Mexicans who had fought for independence from Mexico united to build a town near Mission Trails Monument. One group included José Gomez, Mariano Castro Pacheco, Francisco Ortiz y Gasset and Manuel Nieto; while the other group included José Garza y Vargas and Antonio Luna. When Encinitas Townsite was first established on December 7, 1857 by merging with Mission Trails Village it had a population of 102 people including 11 women. On January 1st 1860 Census their population increased to 129 residents including 12 women after Samuel Parsons donated land for a public square which still stands today across from current day I-5 Racetrack Rd., just south ofencinity beach parkway exit 116A/B

The population of Encinitas grew rapidly during the early 1900s, as a result of its location on the San Andreas Fault and its access to water resources. In 1906, the town was incorporated and began to grow rapidly; by 1911, it had outgrown its original municipal boundaries. By 1920, Encinitas had become an urban center with a population of over 100,000. During World War II,Encinitas played a significant role in the defense of California; many military personnel were stationed in the city during the war and some built their homes there. After the war,Encinitas experienced rapid growth due to new development and technological advances; by 1990, it had reached its current size.
