The population of Escondido grew to over 81,000 by 2010. Gourmet coffee first began brewing in Escondido in 1874 as an artichoke coffee roaster by two Italian immigrants, Salvatore Ghirardelli and Antonio Benedetti. The original espresso machines made use of water that had been treated with lime and salt to improve its flavor and clarity before being served to customers. In 1916, Harry Fenton founded The Daily Grind Coffee Cooperative which became one of the largest gourmet coffee cooperatives in America. Today's Escondido Coffee Company has been on the same location since it opened its doors in 1926. The company produces more than 40 different types of coffee beans from around the world including Ethiopian Yirgacheffe, Guatemalan Xochimilco, Colombian Robusto, Brazilian Aroma Sulky Santos and Acapulco Blue - all signature styles specific to Escondido's own unique climate and soil conditions.

The first Europeans to visit what is now Escondido were Spanish fishermen on their way to Mazatlan in 1519. They named it "Hacienda de las Animas" (Castle of the Souls). A year later they established a Mission there with Father Junípero Serra as its leader. By 1821 the mission had been abandoned and most of its land ceded to Mexico by Governor Manuel Micheltorena for development into Rancho Santa Fe de la Alhambraeno grantee Monterey Bay District#2 under Mexican rule. A few years after Mexican independence from Spain was gained in 1821, American settlers started arriving in what is now Escondido; among them were José Sarabande and his brother Francisco Sarabande who founded one of America's first ranchers' associations called La Sociedad Anónima de Agricultores de San Diego y los Padres Obispos (The Association for Agriculturalists of San Diego and The Archbishopric), which helped organize early western US farmers into cooperative groups that became known as "los granaderos." These men organized local militia units to protect themselves against hostile Indian tribes and built roads and trails through present-day Escondido during this time period. It wasn't until 1862 when General John Custer marched his forces through central California seeking refuge from battle east of Big Sur that General Phillip Sheridan ordered Colonel James Wofford to march down Highway 1 from Big Sur across northern Sonoma Valley toward Los Angeles about 20 miles southeast of where Escondidnow stands today. At this point Wofford divided his command: he appointed Lieutenant Colonel Oliver Halleck commanding column XVII Corps northwest along I-10 while MajorGeneral George Armstrong Custer commanded column XXIV Corps northeast along State Route 159 southwesterly to join up with LtCol Halleck near Antelope Wells Reservoir just east ofpresent-day Escondido In 1864 William McKinley created a new U S territorial government within Mexico known as The Mexican Territory when he took office as U S President; however much like our current day situation with no boundary between state & federal governments, there was no governing body or authority over any place within the Mexican Territory save for Gadsden Purchase lands northwesterly beyond El Centro City Limits including present dayEscondido On July 1st 1870 general Santiago Bolaños relieved Captain Jeannerette d'Aquin as military governor[1] over issues related to grazing rights issue on Rancho Santa Fe granted by Don José Maria del Valle y Asalto some twenty years earlier; Bolaños appointed Juan Rodríguez alcalde.[2] After 10 months mapping out an election plan Rodríguez resigned effective November 2nd 1870 due to health concerns only days before polling day because he could not agree on how voting would be conducted[3][4][5]. Initial results showed Bolaños leading but upon further investigation it was found that two thirds[6]of voters living in town did not actually cast ballots because they were too scared or intimidated by either Rodriguez orSanta Fe ejidos (a group led by Antonio Romo) - although many residents did attend church services sponsored byel Valle y Asalto daily throughout Election Week.(See [7])Rodriguez tried again on December 6th but again failed due to illness only hours before polls opened Kickstartingthe Panic Of 1871 which caused interest rates on real estate investments nationwide to skyrocket from 3%+ per year at $25/$100(8)] Up until then prices for rural land had been relatively stable at around $12/acre withers .
