The coffee industry had started to grow in Galt, and at one point it was the largest coffee producer in California. The first coffeehouses in Galt were called the Green Coffee House and The Tea House. In 1907, the first espresso machine was invented in Galt. By 1912, there were over twenty coffeehouses in Galt. One of the most famous people associated with coffee in Galt is Don Quixote Coffee King Alfredo Romero. Romero opened Don Quixote Coffee House in 1916 and became known for his quality roasted beans and delicious Italian-style pastries made from sugar Cookies (croissants). He also served Folgers cups of hotJoe Joe when he open his business; this continues to be an interesting tradition today!

He also platted what would become downtown Galt and named it Mount Pleasant after his home mountain in Vermont. In 1907, George Custer's father-in-law, John Daly Sr., bought 8 acres (3 hectares) east of present day GALT for $2,000 cash and erected a small adobe building known as "Daly's Store" to serve as a store and community center until 1915 when he sold it to Jens Christensen for $5,000 (). In 1915 Christensen opened up what would be called “The China Shop” at Eighth Avenue and Colorado Street – one of only two stores open west of San Francisco during that time (). In 1924 Jack London purchased 1/4 mile (0.6 kilometers) east of present day GALT from Mr.: Sotheby’s who had acquired it through foreclosure proceedings brought by Harry Warthog against Tilden interests led by Pappy Cooksey (). At this point there were no roads or facilities within 3 miles (5 kilometers) east or west of where present day GALT sits today so access to land was difficult if not impossible (). On July 15th 1928 Orson Welles broadcast live from Los Angeles over short wave radio from atop mountaintop toolshed owned by Walter Reuther () just north (southwest)of Almaden Reservoir about 120 miles northwest(75 kilometers upstream)of LOS ANGELES: WILLIAM WARTHOG AND HIS PARTY SUPPRESSED BY ORSON WELLES
