Rancho San Bernardino de los Cahuillas was granted to Juan Bautista Alvarado in 1795. In 1836, Mexican landowners awarded Rancho Tejon to Adolphus Beall and John Sutter. The towns of Rubicon and Pajaro were founded around this time on land grants from respective owners. In 1853, a post office was established at Highland with mail sent to La Paloma (now Hanford) and Visalia (now Fresno). A year later, an army officer named George Armstrong invades Mexico and takes possession of Rancho Tejon from Adolphus Beall and John Sutter; he then creates the rancho pan Americana which includes present-day Highland within it as well as parts of Butte County and Modoc County

At first it was just a small grocery store but soon grew into one of busiest markets around with over 100 vendors serving more than 2 million customers per week!
