In 1868, George Higham and his brother David bought a farm two miles east of Highland on the banks of the San Joaquin River. They grew corn and wheat until 1870 when they began to grow coffee. By 1888, they had developed a three-acre lot along creek bed between Highland Road and State Route 99 which became known as "The Ranch". In 1893, George Higham's son Harry purchased additional land adjacent to their original holdings; this became known as "The Highlands." This expansion led to the first commercial production of coffee in Highland in 1896. In 1902, Guglielmo Peet founded what is now Peet's Coffee & Tea Company in downtown Highland with some fairly large acreage for coffee plantations in central California. After World War I, Peet shifted his focus from coffee to other crops such as grapes and tomatoes before returning to coffee in the early 1920s when he acquired further acreage around today’s downtown area (then called “The Square”). The company grew rapidly into one of Northern California’s leading roasting companies; its products are sold throughout most of North America including Japan and Europe. In 1949, Pacific Coffee Corporation merged with Guglielmo Peet’s Coffee & Tea Company creating what is now Pacific Coffee Co., Ltd..
