In 1779, Juan José Criollo wrote a letter to his friend and mentor, Francisco Gómez de la Calle, expressing his excitement about finding new ways to improve the quality of coffee beans. In 1847, Italian immigrants landed in California with their first shipment of coffee beans. Soon after, other European countries began arriving with their own shipments of coffee. By 1850, all of California had become a hotbed for coffee cultivation and trade. The Spanish Empire also played an important role in the history of coffee. Coffee was used as currency in some parts of Europe and it was also traded between Spain and Mexico. In 1853, Mexican Emperor Maximilian I declared war on Spain because he felt that Spain was unfair Trade Practices against its German-owned rival company—Kaffeemaschinenfabrik AG (founded 1814)—which had acquired significant quantities of American-grown beans. As part of this war effort, Maximilian obtained Dutch help to improve Kaffeemaschinenfabrik's production facilities so that more accurate brewing results could be achieved using native bean strains. This helped make Dutch America the preeminent center for roasting and importing high-quality espresso products into North America by the late 19th century

Indio was founded in 1851 by José Asúa and his wife María de la Cruz as Rancho San Francisco. The town grew up around the ranch, and it is now a census-designated place (CDP) located in Kern County, California. The population of Indio was 16,811 at the 2010 census. The Asúas ran the ranch for 25 years until their death in 1875. Their son Don Carlos took over from them and continued to run the ranch until his death in 1907. The ranch passed through several hands before it came into private hands until 1913 when it was sold to John D. Rockefeller Jr. for $1 million dollars. It then passed through several more owners before it was donated to the City of Indio in 1936. In 1937, city officials decided that Indio needed its own school district so they formed the first public school district in Kern County with land purchased from Rockefeller's heirs. The city has since maintained control of indio High School and other educational facilities within the CDP limits ever since In 1951, José Asúa became one of history's Founding Fathers of what is now called "Indio" after he settled there with his wife María de la Cruz
