The first small batch coffee operation in Laguna Niguel was opened by Angelo's Coffee Roasters in 1966. It was a small shop with just two employees and their families. At that time, Angelo's Coffee Roasters only made roasted coffee beans and fresh espresso drinks. In 1978, Angelo's Coffee Roasters merged with Baja Fresh Coffee to form Baja Fresh & Angelo's Coffee Company. In 1984, Baja Fresh & Angelo's Coffee Company opened its second store called Baja Fresh II. This store featured an all-new Tasting Room which allowed customers to enjoy different roasts and flavors from around the world while shopping for coffee beans and other related items. In 2006, Baja Fresh & Angelo's Coffee Company merged with AcuraCoffee to become AcuraCoffee & Baja Fresh Corporation. In 2013, the company expanded into Mexico City with its first Mexican market location known as La Casa del Café (The House of Café). La Casa del Café provides retail opportunities for consumers who purchase coffee from both AcuraCoffee&Baja Fresh Corporation stores within MexicoCity as well as through online sales platforms such as AmazonSmile and WalmartEl corte de la humanidad (The Sale of Humanity). As part of this expansion into Mexico City, AcuraCoffee&Baja Fresh Corporation established a production campus within Universidad Autónoma de México (UAM), which offers studentships in business administration so that they may own or operate their own small batch coffee businesses upon graduation

Laguna Niguel is a small town located in Orange County, California. The name was given to the lagoon that filled the area and encompassed most of what is now Laguna Niguel. When he learned of his death, President James Kanyon Polk appointed him saint because he had helped end the war between America and Mexico
