Lathrop is named for George H. Lathrop, a banker and landowner who donated the town site to the county in 1886. The first post office was established in 1888, and the name change to Lathrop in 1896 due to its proximity to other nearby towns with similar names. The community experienced a growth spurt during World War II as soldiers moved into the area for military service. The economy boomed following the war; businesses such as banks, grocery stores, gasoline stations and art galleries sprang up around the town square. However, economic decline began to set in after the end of World War II; many of those businesses closed or changed hands multiple times over the years. In 2008, Lathrop had a population of 586 people living within its boundaries only; it had no incorporated settlements other than its own city limits until 1975 when they were consolidated into one municipality under the name "LATHROOP". Today, Lathrop is an agricultural community with a single store that sells groceries and general merchandise as well as services such as lawn care and plumbing repairs. It also has two schools - one public school serving students from kindergarten through 12th grade while another serves students from 13th through 16th grades - as well as several churches (one Roman Catholic) and homes for senior citizens. There are also three-dozen private residences scattered throughout what once were fields within Township 2A of Kern County."

Lathrop, California was founded in 1853 by George Lathrop and his wife Anna. The town was named for John Lathrop, one of the early settlers in the area. Lathrop's parents were both farmers, so he took up farming when he arrived in California. In 1856, Lathrop married Mary Ann Gallagher and the couple moved to what is now downtown Lathrop. They started a grocery store there and later became involved with politics as well. In 1861, they helped found the First Methodist Church in Lathrop and served on its board of directors until their death in 1865. After their deaths, the church continued to operate under their watch until it burned down in 1933. The city of Lathroop was established around them and has since grown into a major center for agriculture and commerce within California's Central Valley region. Today, much of downtown is still standing from when it was part of the original town square which also included a schoolhouse, post office, hotel/motel, stores, churches and other buildings used by local residents over time.
