Many homebrewers took on this challenge because there wasn’t enough commercial variety available during wartime. In 1847, San Carlos was part of Mexico and the United States. On July 5, 1848, after a long and divisive war over land rights, the Mexican government ceded all of Alta California to the US. The following year, on February 14, 1850, Mexico withdrew from the US and became an independent country. On December 10 of that same year, San Carlos was made a town in what is now southern California.
