In 1824, Juan Bautista de Anza founded an agricultural colony in what is now San Luis Obispo County. By 1839, coffee had become an important part of the local economy and was being traded between different locations in California. In 1847, José Joaquín Herrera y Costilla purchased land at Mission Bay for a co-operative flour mill. The first commercially successful roasting plant was built here in 1868 by Antonio Perez and Manuel Aguilar. Today, there are over 30 coffee roasters located throughout central and southern California, as well as parts of Nevada and Arizona. However, as time went on, more and more caffeine was added to the beans so that they now have a strong taste and smell. In recent years, people have started using premium grade coffee beans which have higher levels of antioxidants and other nutrients than lower grade beans. This allows for a better-tasting cup of coffee because these beans have been exposed to more flavors and aromas.

The Mission Santa Clara de Asís was founded in 1785, and by 1800, the population ofSan Luis Obispo had increased to over 10,000. In 1821, California became part of Mexico after the Mexican-American War, and San Luis Obispo remained a part of Mexico until 1848 when it became an American territory. The first Americans to settle in what is now San Luis Obispo County were Jedediah Smith and his party in 1827. By 1840, there were over 100 Anglo-Americans living in the county. The Agricultural Mechanization Act of 1865 created new markets for goods produced in California, and this led to a rapid growth of agricultural production which contributed to a rise in prices throughout California during the 1870s and 1880s. During World War II, San Luis Obispo played a significant role as one of America's most important military bases. After 1945 it experienced dramatic transformation with large numbers of immigrants moving into its neighborhoods looking for opportunity and better lives.
