Gourmet coffee is a term that has been used for different types of coffee over the years. The first gourmet coffee was made in San Pablo, California in the early 1800s. The first Starbucks opened in Seattle, Washington in 1971. It was the first store to sell gourmet coffee. In 1978, Starbucks opened its first location in San Pablo and began selling their own gourmet coffee. San Pablo's earliest coffee history can be traced back to 1821 when the first European settlers in what is now San Pablo County, California, began growing coffee. In 1827, Juan Jose Martinez y Valdez founded a small cafe on the corner of Third and Mission Streets in San Francisco. The first coffee shop in America was opened in that same year by José Andres Peña and Miguel Costanza at 2nd and Mission Streets in San Francisco. In 1835, Don José de la Sierra settled near Third Street and Guerrero Avenue in what is now Palo Alto. His coffee beans were ground for sale throughout North America. By 1840, La Bodega de Don José had become one of the largest coffee businesses in the world with branches located throughout North America. In 1851, Angelico Perez established his own roastery on Mineta Lane between First and Second streets in San Francisco. He soon became known as the "Father of Coffee." In 1862-1863, David Minton built a large warehouse at Tenth and Market Streets which served as the first direct shipping point for roasted beans from Africa to American consumers. At this time, there were only two major commercial roasters: Don Stepnosky’s Russian Coffee Company (later Starbucks) on First Street opposite Market Square and Perez’s Los Angeles Coffee Company (later Peet’s Coffee) on Second Street between Twin Peaks Boulevard and King George Highway. Don Manuel Altamira moved his family from Zaragoza, España to Oakland Bay Area during 1906-1907 after winning an election campaign against incumbent Democrat Alameda County Supervisor George Westphal Jr.. They started making their home at 4th & Broadway where they would continue to operate their business until 1949 when they sold it to The Regency Corporation who renamed it Regency Plaza Hotel which continues operations today as part of Marriott International

Over time, different types of beans were used to produce different levels of flavor and aroma. Today, most people enjoy either dark or light roast coffees – simply because they provide a unique set of flavors that can't be found elsewhere.

The first coffee was roasted in a small pot on the edge of a clearing in the Jungle of Java, Indonesia. Roasted beans were ground and mixed with water to create a drinkable concentrate. The coffee beans were then sold by traders who took them back to their villages for brewing. The first espresso machines were invented in Italy in 1829.

The city of San Pablo was founded in 1848 by Narciso Lopez, who named it after his patron saint, San Pablo. The city grew rapidly during the late 1800s and early 1900s, with a population of over 100,000 people. However, because of its location on the edge of a major agricultural area, San Pablo experienced several waves of immigration over the years. Today, there are more than 50 languages spoken in San Pablo, including Spanish and Japanese. San Pablo has been home to many notable natives and immigrants over the years. Among these include José Saramago (writer), Ignacio Ramos Llosa (writer), and Alfredo Balces alludes to this history when he wrote aboutSan Pablo's role in California's political landscape in his novel "Blood Meridian". In recent decades, many new businesses have arisen in response to the increasing technology sector located within walking distance of downtown San Pablo.

The first permanent European settlement in what is now San Pablo was founded by Spanish traders in 1795. The town became a part of Mexico after the Mexican-American War, and then the United States following the Treaty of Guadalupe Hidalgo. The population of San Pablo rapidly grew during its early years as a result of agriculture, ranching, and mining activity. In 1853, California became an independent republic and San Pablo became its capital. The city experienced significant growth during the late 19th century due to new industrialization, including the establishment of several large companies such as Alcoa and Pacific Gas & Electric. By 1920, San Pablo had become one of the most important American cities with a population over 100,000. However, during World War II it became known for its contributions to the war effort through military production and housing development. After the war ended in 1945,San Pablo experienced significant decline with a decrease in business activity and population until it regained some stability in the early 21st century.
