The history of San Pablo coffee begins with the arrival of Spanish traders in 1776. The first European to see and taste the beans was Gaspar de Portolà, who visited the area in 1778. The beans were soon traded back and forth between Spain and Mexico, before finally reaching America. In 1814, a group of Germans founded a small village on the banks of San Pablo Creek, which became known as San Pablo City. The first coffee house in town was built by German immigrants named Johann Friedrich Knoppers in 1815. By 1837, more than seventy-five stores had opened up around town selling both European and Mexican-made coffee. Coffee production began to increase significantly after 1850, when a new irrigation system was put into operation that allowed for larger lots to be cultivated near the creek. By 1870, approximately one hundred acres had been devoted to coffee production. With advances in technology and infrastructure during the late 1800s and early 1900s, San Pablo became an important center for café culture throughout California. From 1915 until its closure in 1937, San Pablo Coffee Company operated one of the most famous cafés in North America – La Caja de Oro (The Golden Cage).
In 1846, San Pablo was founded on the peninsula formed by two forks of the Sacramento River. The town site was chosen because it was flat and easily inland. The first permanent residents were Mexican traders and their families who arrived in small boats from more than a hundred miles upriver. By 1850, San Pablo had a population of seventy-five people. The town grew quickly due to its location, access to good water supplies, and easy transportation via stagecoach and wagon train. In 1854, the California Railroad built a line from Oakland to San Pablo and began carrying passengers and goods. This new development led to an increase in business for local merchants and helped spur growth in the town. San Pablo became an important center for trade with other parts of California. It also became known for its quality of life, which attracted many farmers and professionals who wanted to live close to the resources that were available. In addition, many residents joined together to form what is now called the “San Pablo Rifles” militia during the Gold Rush period in order to protect their interests against raiders or mobsters seeking money or land. During World War II, San Pablo played an important role as a munitions production plant located onsite at North Beach Creek near where Highway 8 crosses it today. The plant produced shells that were used in Europe during World War II. After the war, most of the plant's property was sold off and most of the jobs left too; however, some workers remain active at local businesses today including Jamba Juice Corporation (a subsidiary), Honda Civic dealership/parts store chain/, Apple Inc., Google Earth usage club/, Pabst Blue Ribbon Brewing Company,.

In 1821, Captain José Francisco de San Pablo founded the Mission of San Pablo in present day San Pablo, California. The mission was part of the Franciscan Missions system and aimed to propagate Christianity among the indigenous people of Northern California. After a few years, the Spanish found out about the mission and attacked it. The native people fought back, resulting in many casualties on both sides. In 1827, after more than a year of fighting, the Spanish surrendered and Mexico took over control of California. After Mexican rule ended in 1848, American settlers started arriving in California. In 1850, they founded what would become San Francisco as a result of the Gold Rush. Because there was no legal boundary between Californias north and south, some people started calling this area "San Pablo" because that's where they thought Amerindians had originated from (the term "California" didn't exist then). The city presently located at the northwest corner of Market Street and Polk Avenue began to form around this time. The first building built in what is now downtown San Francisco was an adobe used as an agricultural warehouse by squatters called The Alameda Co., which became City Hall in 1851AD when merchants moved into new buildings on Market Street across from City Hall on Polk Alley. During its early days as a small town within Mexican territory near today's downtown San Francisco Bay Area (northwest corner of Market Street & Polk Avenue), much important government business took place at various stations along Market Street including: -City Hall Annex - Built1851AD by squatters for Merchants Association -Public School #1 - opened Separate School District No 1 – Nov 17th 1861 -Public School #2 - opened Nov 17th 1861 -Polk Alley Jail - opened 1865 AD by Sheriff John Hennepin with cells for 6 men maximum cells were 8’ long by 4’ wide with 2 door openings each side
San Pablo was founded in 1821 by Juan Bautista de Anza as an agricultural colony on the banks of the San Francisco River. The Mission San Pablo became a Franciscan monastery in 1836, and the town grew up around it. In 1865, San Pablo incorporated as a city, and has since grown into one of Northern California's largest cities.
