The early days of professional roasting were fraught with difficulty – because different parts of the world had different climates, it took many years for roast techniques to become standardized across regions. The mission is now part of the Cathedral City neighborhood of Anaheim. On May 25, 1821, the Mexican government granted land to José Joaquin Cervantes for an armory and artillery battery to be built in what is now Orange County. On December 7, 1824, General Antonio López de Santa Anna granted the land to Josefina Carrillo for herself and her family. In 1827, Carrillo gave most of her land to Juan Bautista Alvarado who named it Pueblo de San Fernando (Pueblo of St. Fernando). The first post office opened in Santa Ana on April 15, 1829. The name may have been suggested by General José Joaquín Cámpora who called the area "Anaheim" because he had seen an orange tree near that location when he led his army through Orange County during its campaign against Los Angeles in1825-26
