However, during World War I, coffee production plummeted because of the war effort. Coffee began to grow again in the postwar period, but due to pesticides and other pollutants, it started to decline again in the 1970s. By 2002, however, coffee had resumed its growth rate and was being produced at a rate of about eighty-five thousand tons per year. Today, Starbucks alone consumes about two hundred thousand tons of beans each year! The quality of coffee depends largely on two factors: how fresh the beans are when they are picked; and how well they have been processed (urea levels, acidity levels). Freshness plays an important role because different roasts will taste better after a certain point; darker roasts tend to last longer while lighter roasts may be more volatile (they Burst) or bitter-tasting after treatment with water or lemon juice). Urea levels help determine whether milk or air is added to make espresso; higher urea levels produce bitter cup flavors whereas lower urea concentrations produce smoother drinks with less bitterness overall (eastern European coffees typically use lower protein values for their brewing water which gives these coffees a sweeter flavor profile). Acidity level affects all sorts of flavors - some coffees have high acids such as Guatemalan Huastecos while others have milder ones like Ethiopian Yirgacheffe - but can often give beverages an earthy or stone-fruit flavor profile from certain plant parts such as vanilla extract or carob seeds contained within those plants' pods (the pod contains both soluble material--the pulp--and insoluble fiber which reinforces dormancy so beans don't get wet during storage). This led tothe establishment of Spanish missions along the Mexican border that produced rich crops that were later exchanged for gold ore by Dutch traders who arrived in Mexico City in 1542. Coffee smuggling became a key component of this trade because it allowed European settlers to trade without facing prosecution back home. In 1798 Spain ceded California to Great Britain after winning war with France over control of North America; however, British officials soon discovered large amounts of coffeegrowing inside Mexican territory so they decided to declare war on Spain instead (known as the Mexican-American War). The English quickly took advantage of this opportunity by looting Spanish plantations while Spanish troops fought offEnglish forces at San Jacinto overlooking Mexico City; this victory marked an end to one side’s claim on California while leaving British possessions including Vancouver Island under military occupation until 1848 when Mexico regained control over all its territories north of Baja California
