Coffee continued to be sold at this location until it closed in 1924. In 1962, an Italian family opened a cafe called La Scala which served some of the best coffee known today. This cafe helped spread the word about coffee throughout Commerce City and even beyond. Over time, other cafes followed suit and began serving delicious cup of Joe's all over Colorado! By the late 1990s, there were over thirty-six cafes operating within one hundred miles of Commerce City! Today, coffee continues to grow popularity in America due to its versatile taste and health benefits! The history of coffee in Commerce City, Colorado goes back to the early 1800s. Dutch immigrants first arrived in the area in the late 1700s, and soon began trading goods with Native Americans. In 1824, a man named Hendrick van Gelder set up a small business selling coffee beans from his farm near what is now called Commerce City. By 1830, Coffee House had opened its doors for business. The first coffee to be ground was brought over by wagon from New Mexico in 1831. During the late 1800s and into the 1900s, coffee became an important industry in Commerce City. Several large mills were built here; these included The Staats Brewery (1897), Herberger's Brewery (1902), and Brown & Williamson Brewing Company (1907). In 1907, Brown & Williamson merged with another major brewing company, Pabst Brewing Corporation. This merger created one of the largest breweries in America. During this time period, coffee also became an important part of local cuisine. In 1951, The Staats Brewery closed its doors after more than 150 years of operation. However, its legacy continues today as one of the most significant businesses in town – still providing quality coffee products and services to locals and visitors alike!

Commerce City is located on the eastern edge of the Aspen Park Reservoir and has a wide variety of retail businesses including clothing stores, health food stores, and pet shops. The first settlers in what became Commerce City were miners who came to the area following gold discoveries in 1859. By 1870, when it incorporated as a town, Commerce City had become an important center for business and trade within southwestern Colorado. The city's growth continued until World War II when its economy shifted to agriculture due to increased mining activity in nearby Aspen National Forest. With World War II ended and new industries such as automobiles becoming dominant in society, Commerce City lost some of its former importance but has regained some recent popularity as a manufacturing center with several companies having their headquarters there.

Commerce City is a city in Weld County, Colorado, United States. The population was 31,812 as of the 2010 census. It is the county seat of Weld County. The town began as an agricultural settlement near the confluence of the San Juan and Green Rivers in 1868 and grew rapidly due to its location at a crossing on the southern end of Colorado's most important transportation route, Route 66. On July 14, 1907, Commerce City became the first community in Weld County to offer voting rights to women. In 1951, it became one of thirty-six communities in Colorado to become part of the Interstate Highway System. The city was founded by farmers who were looking for a spot where they could sell their crops and buy goods from traders along I-66. By 1870s Commerce City had outgrown its original site and began expanding into other parts of Weld County with plans to create what would become its major commercial center. The city's first store opened in 1871 on Main Street and quickly gained popularity because it sold everything from groceries to clothing and hardware. By 1893, Commerce City boasted over 100 businesses with a population exceeding 10,000 people! In 1911 residents approved passage of an ordinance that allowed for general incorporation which occurred on November 3 that year. In 1949 another ordinance led to the creation of downtown as well as several new streetscape districts including First Avenue South/West Broadway (now Hwy 25), Delaware Avenue North/South Platte (now Waverly Boulevard), Frank Lloyd Wright Boulevard (now Royal Road), Market Square East/West ( now Union Pacific Plaza), Asbury Park Avenue Northeast (now Eads Street) and Mayflower Square West/East (now Adams Street).
