In 1924, Don Bollinger started the Bollinger Coffee Company which became one of the largest coffee companies in the United States until its merger with Maxwell House in 1971. Bollinger's coffee house at 15th & Vine Streets served up classic Americano coffee until 1984 when it closed because of poor sales. In 1975, Bob Bogle founded Boulder Coffee Company which became one of Colorado's leading commercial coffee businesses with a location at 1225 Pearl Street near LoDo shopping districts until its closure in 2010 due to financial difficulty. Boulder Coffee Company is also known for their popular "Brews by Bob" program where customers can purchase individual cups of coffee made fresh each day at their shop or online ahead of time delivery directly to their home or office!

In subsequent years, however, commerce has suffered due to changes in technology which have caused declines in business activity throughout much of Weld County including CommerceCity itself. Despite this decline however, many businesses still call CommerceCity home due to its close proximity to downtown Denver and access to major transportation corridors like I-25 and I-70
