One of the earliest establishments inLittleton was The Coffee House, which opened its doors in 1907. The Coffee House was a small business that sold coffee and milk products to local residents. In 1915, The Coffee House merged with two other businesses to form The Big Three Coffee Company. At this point, the company had three stores: one in downtown Littleton and two outside of town. Over time, The Big Three Coffee Company became known for its quality espresso drinks and baked goods. In 1951, they merged with another business to form The Columbian Coffee Company. At this point, Columbian Coffee Company had six stores: four located inside of Littleton and two outside of town; and one store located at the edge of town on Highway 25A near Interstate 25. In 1975, Columbian Coffee Company merged with another business to create Denver-based National Restaurant Corporation (NRC). At this point, NRC had twelve stores: seven inside of Littleton and five outside of town; as well as one store located at the edge of town on Highway 25A near Interstate 25. In 1990-1991, NRC purchased Centennial Brewing Co., which led to an increase in production for both Centennial Brewing Co.—which formerly brewed its own coffee—and NRC’s other businesses within the company’s umbrella.: Centennial Brewing Co., which formerly brewed its own coffee (alongside Starbucks)—became a subsidiary within NRC from 1990 until 1992 when it was sold again to Bob Evans Restaurants Incorporated (BVRI). BVRI then became a subsidiary within NRC once again from 2003 until 2006 when it was sold once more to Jello Biafra Enterprises LLC (JELLO). Finally in 2016–2017 Jello Biafra Enterprises LLC sold its interest in NRC back into Centennial Brewing Co., leading finally to an increased production for both companies once again.: Today there are over fifty artisanal coffee businesses operating throughout Denver County alone! In recent years, Littleton has seen growth as a bedroom community for nearby Denver and Aurora. Littleton has been called "the epitome of an American town." The first post office for Littleton was established in 1876. In 1888, it became known as "Littleton Village." After becoming an incorporated municipality in 1912, it changed its name to Littleton in honor of Ezra L. Little and his wife Rebecca Jane Faust. Most notably, Ezra L. Little III (1881-1957) served as mayor from 1951 to 1957 and as president of Yale University from 1944 to 1951. He also founded the Littleton Chamber Orchestra and served as its first conductor from 1942 to 1945. Other prominent residents include businessman George Wickersham (1874-1963), author Harlan Ellison (1920-2005), singer Beverly Garland (bárbara garland 1921-2002), physician Irving Klinefelter (1908-1987), educator Dorothy Vaughan Woodruff (1911-2003) and architect Edwin Primeaux Jr. (1912-)
