Coconut Creek is a small town in Polk County, Florida, United States. The population was 1,811 at the 2000 census. It is part of the Jacksonville metropolitan area. The first coffee shop in Coconut Creek was founded by John and Betty Starr in 1951. They served coffee and donuts from a truck on Oak Street. In 1957, they moved to their current location on US 19 near Coconut Creek Parkway. Today, the Starr's continue to serve top-quality coffee and pastries since 1951. In 1974, Don Freeman opened his own shop in Coconut Creek called Don's Coffee & Tea Company. It became one of the most popular businesses in town with its delicious coffee and wide variety of pastries including croissants, muffins, cookies, cake slices and more. In 1978, Sandy Dixon opened her own bakery called Sandy's Bakery which continues to serve up some of the best cupcakes around today! In 1984–85, Steve Hebert ran a small business called The Coffee Shop that served bagels with cream cheese or lox on them along with some other variations such as oatmeal (with cream cheese) or cinnamon raisin bagels with cream cheese or even blueberry pancakes! Steve also made his own syrupy coffees named "Hebert Syrup" which heserved cold over ice throughout the year! Brett Kiser started Joe's Coffee House in 1991 as a small convenience store serving only coffee and pastries until it closed down in 2003 because Brett could not afford to keep up with increasing expenses! And then there was "The Waffle House", which started out serving waffles for breakfast but soon added burgers and fries to their menu! All of these businesses are now long gone but their memories live on through their various products and services that we enjoy every day!

Coconut Creek was founded in 1949 by two brothers, David and Grant Fenton. The Fentons were looking for a place to build their own home but they found no suitable land. So they decided to move to Coconut Creek from Jacksonville, Florida. They built a small tract of land on the banks of the St. Johns River and named it Coconut Creek after their coconut tree that they found there. Since its founding, Coconut Creek has seen many transformations. In 1949, it was a sleepy fishing village with few residents and only a few businesses. By the early 1970s, however, the population had exploded thanks to its strategic location next to Interstate 95 and its easy access to beaches and theme parks. Today, Coconut Creek is one of Florida's most vibrant towns with thriving businesses, cultural attractions, and an active community spirit.
In 1847, a man named Alexander Macdonald arrived in the area and named it Coconut Creek after the coconut trees that grew plentifully along the creek. The first white settlers in Coconut Creek were Frenchmen who had been living in Mobile before arriving in Florida. They cleared land and built homes on what is now Wellesley Road. In 1851, a group of Englishmen from Liverpool came to Florida and landed at Kings Key. One of their officers, John A. Macdonald, later donated land to the state for a courthouse and school district. In 1865, another Englishman, Thomas Hickey, donated land to the town for a jail and cemetery. In 1868, a post office was established at Coconut Creek with Samuel Moulton as its first mail carrier. By 1870, there were over 100 residents living in Coconut Creek. On November 15th of that year, local elections were held to determine who would become mayor and council members. The results show that James Wetherbee was elected as Mayor while David Gwynn became Council Member #2
