When Europeans first arrived in the Florida Keys, they found an isolated and forgotten community of Key Largo. The area was inhabited by the Timucua people for centuries before European exploration arrived. Spanish colonists were not impressed with the lack of agriculture or industry in this remote corner of the Caribbean, so they neglected it until American settlers began to arrive insignificant numbers in the late 17th century. The first Europeans to visit Eustis were French Huguenots who set up a trading post on Islet Key in 1699. Although their presence encouraged Spanish colonists to start cultivating crops in what is now Eustis, no new buildings were erected until about 1800 when Fort Mathews was established. The fort was built on a small island which served as a naval base during the 18th century. In 1824, Captain James Cook anchored his ship at Eustis while searching for islands off the Florida Keys for HMS Beagle expedition that would explore North America. When he sighted Eustis from his flagship Resolution, he decided to land his men there and explore this newly discovered island chain. After landing some of his men on Islet Key and exploring some of its natural resources such as shellfish and sugar cane, Cook returned back to HMS Resolution on October 12th 1824 with news that he had reached Cape Horn! Eustis became an important military outpost during America's War for Independence because it lay just south of St Augustine on Florida's east coast and near supply points for Confederate forces engaged in battle against Union forces throughoutFlorida during that war; however, nothing significant happened here until after World War II when efforts began to developEustis into a commercial center due to its strategic location betweenSt Augustine and Jacksonville along Interstate 95 corridor). These days Eustis is known as "The Coffee Town" due largely to its many coffee shops dotting every block downtown along I-95 Corridor where locals can enjoy freshly brewed coffee any time day or night
