It has been more than 50 years since Gainesville, Florida was the home of one of the United States' first coffee factories. The first coffee shop in Gainesville was the Coffee Bean & Tea Leaf on University Avenue. The store was open from 1971 to 1974. The first coffee roaster in Gainesville was Dutch Bros. Coffee, which opened in 1978. In 1984, Roasters of America founded its original location at 111 E State Street and began brewing coffee for local restaurants and businesses. In 1992, Dutch Bros.'s location was replaced by the current location at 601 N US-1st Ave., which served as the company's headquarters until it closed its doors in 2006. In 2001, Gainesville's first cappuccino cafe opened at 5111 S University Drive, followed by a second cafe in 2003 at 501 W Alachua Street. In late 2006, Dutch Bros.'s former location on US-1st Ave., which had been serving as the company's headquarters since 1992, became a student housing development known as Rooftop Village II. The property is currently home to two pizzerias called Pizzeria Bottega and Pepe's Pizzaiola; two cafes called Café della Canina and La Tenda Italiana Coffee House; and six small shops including Caffe Gambero e Filarete (Café Gambero), Joe's Pizza (Joe's), Panini Bread (Pane Bianco), Peet’s Cafe (Peet’s) and Starbuckslocation across from UTC Florida International University campus on Beasley Road near Bellsouth Boulevard.

In 1971, Starbucks opened its first store outside of North America – located in Seattle’s International District – making it one of the earliest retailers that sold tea and coffee together as part of an integrated marketing strategy. In 1976–1977 Starbucks introduced K-Cup pods which allowed customers to purchase pre-packaged ground coffee that they could then brew themselves at home or office settings with Keurig machines or other types of brewers using filtered water and minimal time consuming steps ( comparable to how espresso is made today).
