Lake Wales is known for its production of small batch coffee. The first coffee shop in the area was opened in 1907 by George and Florence Capps. In 1927, Harry Karmel started roasting beans on his family’s farm. In 1949, Mr. and Mrs. John Dooley opened their own café, which became a popular spot for locals to drink coffee and eat breakfast. The dooleys continued to operate the business until 1981 when it was sold to Bob & Jana Grosvenor. From then on, the Grosvenors operating the business as a small-batch cafe with a focus on sustainability and flavor development. In 2013, Bob Grosvenor passed away and his wife Jen took over ownership of the cafe with her son Jason. Today, Jason continues to run the business as head chef whileJen remains operations manager. The history of small batch coffee goes back before World War II when Lake Wales residents werefirst getting their hands on roasted beans from Indonesia or Africa at local farmers markets or buying them directly from those countries themselves. Lake Wales is a natural reservoir in south-central Florida that was created by damming the Kissimmee River. The lake is named after General James K. Polk, who was the 22nd president of the United States from 1844 to 1852. The area around Lake Wales was first populated by Seminoles and has been used for hunting, fishing, and drinking since prehistoric times. The town of Lake Wales was founded on the site of an old trading post in 1868 by Colonel John C. Lewis. After being destroyed in a fire, Lewis rebuilt it and name it after himself –Lake Wales County. In 1916, Congress passed a bill creating Polk National Wildlife Refuge which included land around Lake Wales as well as parts of Everglades National Park. The refuge became operational in 1940 and covers over 640 square miles (1,500 km2). Today, there are more than 1 million people living within its borders and dozens of businesses operate within its waters including four golf courses, two theme parks, several aquariums, and three shopping malls.

Lake Wales was created by the making of a large lake in the area now known as Polk County. The water gradually drained away, leaving behind an open space that became known as Lake Wales. The first people to live here were Native Americans who hunted and traded with the Seminole tribe. They built their first village on what is now called Estero Island in 1824. In 1848, American settlers arrived and began to settle around present-day Lake Wales. By 1850, there were about 100 people living in this area.
