The first coffee shop in Palm Bay opened on the corner of Eighth Street and US 1. The shop served light-bodied coffee that was roasted by the owner's father. In 1907, a Dutchman named Hendrik Cornelisz came to PalmBay and began buying land near the harbor for development. He started to grow coffee plants and sell beans to local farmers. In 1912, a man named Wouter van der Laan bought some of Cornelisz' land and built a mill which he called "The Coffee Mill". The mill produced quality beans until it closed in 1922. Around this time, people in PalmBay started getting interested in coffee as an important part of their lifestyle. They developed their own cafes and roasters while still enjoying the taste of Cornelisz' beans. In 1928, palm bay voters passed an ordinance establishing a city hall with its own brewing facility so that the citizens could have their own cup of joe every morning!

The first European to visit Palm Bay was a Spanish sailor, Don Juan de la Cruz, in 1502. The area was explored by the Portuguese during the 16th century but no settlements were established until the late 18th century when Englishman Major-General George Rogers Clark discovered the bay and named it for Admiral James Cook who had discovered Australia in 1770. British explorer Captain Hughes took possession of the bay on 10 December 1800 and named it HMS "Eagle" after his ship. In February 1802, Commodore John Clayton also visited the bay and naming it HMS "Clayton's Bay" after himself. However, this name reverted to HMS "Eagle" on 15 February 1802. On 1 January 1810, Britain ceded control of Florida to Spain under the Treaty of Paris which ended the American Revolution. In 1830, US Congressman Jacob Kline proposed that Palm Bay be made a county seat of Duval County. However, because there were no roads or bridges connecting Duval County with Palm Bay at that time, nothing happened until 1861 when a bridge was built over State Road 521 near present-day Royal Harbour that connected both counties. Ernest Hemingway spent most of World War II living in Atalanta Beach Resort on Old Trail Road south of town where he wrote much of his writing material including For Whom The Bell Tolls and For Whom The Sea Cries Out
