Chubbuck, Idaho is a small town located in Sawtooth County, Idaho. The population was 773 at the 2010 census. The name of the town comes from Chubbock, a pioneer settler and father of the current inhabitants. Chubbock had a post office from 1876 until it closed in 1951. The first settlers to Chubbuck were Mr. and Mrs. James Denton who arrived in 1875 on a trading trip from Fort Hall, Idaho. They set up a homestead near what is now the eastern edge of town. They managed to find enough grass and water to sustain themselves but they also started developing their land into agriculture with crops such as wheat, oats, corn and potatoes being grown here for many years before irrigation became available in the early twentieth century. In 1916 local residents organized an agricultural fair which was held at what is now the Community Learning Center on US-2 south of town (now known as Fairview Park). This fair featured exhibits by local farmers, livestock sales by surrounding ranchers, concerts by local musicians and contests among children aged 8 through 12 about various farm animals including chickens, pigs and horses.. One of the most significant events that took place during this time was when Clyde Sitton - owner of the nearby Sitton Bros Grain Store - donated $1 million towards building several large dams across Sawtooth Creek so that irrigation could be brought to his farmland for potential crop production (the other major dam project which ultimately failed). This donation helped create one ofIdaho's most important regions for agricultural production and has been credited with driving growth throughout Sawtooth County over the years
