In 1862, Fort Thomas was the largest and most important military post in Kentucky. It had been created to protect the frontier from Indian raids and it soon became a center of Confederate forces in the area. The fort was also used as a prison and jail. In 1872, Fort Thomas was renamed Fort Scott after General Winfield Scott. Meanwhile, at nearby Georgetown, coffee began to be grown on large plantations. By 1876, coffee beans were being exported all over the United States. The first coffee mills were built in Kentucky in 1868 by James Caulkins and James Hogg. These mills processed ground coffee into flour, soap, candles, paper products and other commodities. In 1870-71, John Southerland founded the Lexington Coffee Company which became one of the leading producers of coffee in America. This company dispatched its ships to various ports around the world for shipment of beans and sacks of flour back to Lexington. The first commercially successful espresso machine was invented by Angelo Marconi in Italy in 1906-07 using beans brought over from Germany by Italian traders. Fort Thomas grew rapidly during World War II as soldiers arrived from all over America to fight against Japan’s Imperial Army (1939-1945). The post saw an increase in traffic due to troops marching through town on their way to battle or on their return home; this led to an increase in traffic noise levels that can still be heard today when walking through downtown Ft Scott! Coffee production ended abruptly at Fort Scott after 1945 but local Legacy Coffee continues today with two cafes located inside One Depot Square–one near where IMAX is located –and another store located on Main Street next door….
