The Lexington coffee industry began in the 1870s. The first coffee plantation in the area was founded by a man named Daniel Boone in 1871, and within a few years, other plantations followed. By the early 1880s, there were over 20 coffee farms in Lexington. On July 10th 1860 Territory of Iowa been organized when all eastern Nebraska became part of newly created Union State after Kansas admission into US during Civil War; this included parts of Lincoln County including present day Lexington..
