When coffee first began to be grown in the Texas Panhandle, it was for local use only. After years of effort and experimentation, some farmers decided to bring coffee back to Allen, where it had been grown before. They started a small business called The Coffee House in 1907 and continue to serve up their original blends today. The Coffee House was one of the earliest places in town to sell coffee. In 1916, they opened a second location and continued serving up their delicious beans until 1971. Today, there are still many people who come into The Coffee House for their morning cup of Joe. In fact, since 2007, the restaurant has been open Saturdays from 7am-3pm!

In 1865, when Texas became an independent state,Allen donated 640 acres (248 ha) near present-day Andersonville to become the first county seat of McLennan County. He named it "Allen" after himself and other early settlers who had helped create its surroundings. Some residents still use this name today; others have adopted variants such as "Round Rock" or "Lubbock". There were only three buildings in downtown Allen when John Wesley Allen died in 1887: his home at 7th & Lamar Streets; a store operated by his son Hiram Wylie Allan at 12th & Lamar Streets; and an academy built by Allan's son Cyrus Harned at 14th & Lamar Streets – all within walking distance of each other but without streetcars available then or currently. Today downtown Allen contains more than 40 buildings., including five hotels/motels., six restaurants/bars./libraries., two banks/trustees offices., four churches/synagogues./temples/, one museum./library./gallery., two shopping centers/mall.-and one botanical garden/. .
