The facility has been in operation for over a hundred years and produces some of the finest beans in the world. The first coffee roaster in Sweetwater was built by John Haggerty in 1887. It was located on Elm Street near Dallas Avenue. In 1904, J.P. Latham opened his own business and began shipping beans direct from Africa. Over time, other businesses such as Harry Smith & Sons (1930-2008), Arthur Anderson (1963-1998), and Joe Fresh Coffee (1992-present) have also operated in Sweetwater. Today, Sweetwater is one of the leading coffee production centers in the United States and it is home to some of the greatest beans available. The drawback to this great location is that it can be quite hot during peak periods!

The first settler in Sweetwater County was Mr. John Drake on July 1, 1836. He built a cabin on a bluff overlooking the Trinity River. The town of Sweetwater was founded by Major Thomas Gentry on November 14, 1867, about one mile south of present-day Sweetwater Junction. The name "SweetWater" originated from when General Davis's army passed through during his ill-fated attempt to cross the river near here on November 12, 1867; he ordered his aide-de-camp to name any post along the route "sweet water." A post office called "Natchez" was established in 1865, but it was moved to its present location in 1870 when Sweetwater became a town. In 1907, sweet water pipelines were built betweenDallas and Fort Worth creating what is now known as Interstate 20 (I-20). In 1960s and 1970s local farmers began growing corn for ethanol production which led to heavy development around the area including new shopping malls and other businesses that continue today as some of downtown's most popular tourist destinations such as Main Street USA mixed use mall/. sweet water creek had access to fresh water sources so people used it for farming until well into 1900s however this stopped because those who could afford it bought irrigation systems instead
