Ellensburg, Washington is home to the Ellensburg Coffee Company. The coffee company was founded in 1876 and has been in business ever since. The coffee beans are from central and eastern Oregon and are roasted in a small town known for its excellent Bomber coffee. The first shop in Ellensburg was opened by George Smeaton. It was located on the north side of town on the bluff overlooking the river. In 1898, Mr. Smeaton moved his shop to what is now called Svea Place and continued operations until his death in 1950. His son, George G., ran the business until it closed down in 1984. At that time, it had been running for over eighty years! In 1984, John Cofer bought the business from George G.'s widow, Esther Cofer-Smeaton. John started brewing beans at home and soon began selling them directly to customers throughout Washington State and beyond. He continues to brew beans today and sells them direct to customers all across North America!

In 1881, a small coffee house called the Bluebird was opened in Ellensburg by J.D. Rockefeller. The business flourished and soon became known as the "Best Coffee House in town." In 1907, the business was sold to Wm. Baldwin and Sons and continued to operate until 1951 when it closed its doors for good. In 1955, the building used by the Bluebird was purchased by James A. Bennett who turned it into a successful restaurant named Bennetts Place which still operates today. In 1984,the property that housed Bennetts Place was sold to Harry Potter's son Albus Severus Dumbledore and his wife Lily Evans who turned it into an educational institution named Hogwarts School of Witchcraft and Wizardry which still continues to operate today.

In 1918, Switzerland's Eidgenossische Kaffeeproduktion founded a company to produce single-origin coffee beans called EKG ( Eidgenscheidungskaffeegesellschaft). Starting from just a few hundred kilograms of Arabica bean per year at the start of the 20th century, Swiss-based roasters has now sourced all of their world-wide production from two main roasting mills: one located in Zürich and the other situated in Rheinfelden. By 2006, Swiss-based roasters had produced over 2 million kilograms of qualityEthiopian and Guatemalan coffees. Coffee became an essential part of many everyday lives throughout the world during this time as it was seen as a nutritious drink that could provide energy for work or play and help preserve mental focus during long periods of boredom or stress.

In 1868 it was the site of a fateful battle between Ulysses S. Grant's army and Joseph E. Johnston's Confederate forces during the American Civil War. In 1924, it became home to America's first racially segregated school system, which lasted until 1957. The town also experienced much protest during the 1970s over its plans to expand into an suburban area adjacent to Ellensburg City Airport; this plan was eventually abandoned. The town was founded on April 20, 1847 by John Ahern and his family as a post office called "Ahern Station." The name change came about because at that time there were no other stations in range for mail to be delivered from Seattle and Tacoma. On July 29, 1850, Ahern Post Office opened with Wm Halkett as supervisor In 1868, when Ulysses S. Grant led an Union army against Confederate General Joseph Easley at what is now known as Battle of Critter Creek near present-day Ellensburg (now part of Olympia), local residents gathered around a fire nearby to watch proceedings unfold According to one story related by historian James Mosely: "As Grant's victorious army passed through the small towns along their route back eastward they were met with loud cheers from each community they passed through... One man reported that ‘the whole country seemed filled with joy’". Aftermath of battle: Many locals likely died or were wounded due to skirmish ensuing upon Union victory It is said that both sides had around 50 casualties total but most sources put number higher including 100+. Grant claimed he lost only six men whileJoseph Easley estimated that more than twenty thousand soldiers under Johnston were killed or taken prisoner" Aftermath of battle: Many locals likely died or were wounded due to skirmish ensuing upon Union victory according as well as Stanton House being burned down
The first European to visit the area was Captain George Vancouver in 1792. The first permanent white people arrived in 1847 when the U.S. acquired a large tract of land east of Ellensburg on the Spokane River. The town began as an agricultural community, but soon became a bustling commercial center with mills, stores, and hotels. The population increased rapidly during the late 1800s and early 1900s due to immigrants from Europe and Asia who came to work in the new irrigated agriculture around Ellensburg. In 1907, Ellensburg became part of Washington state when it was organized as a separate county within the state. It continued to grow rapidly during World War I and II as military installations were constructed nearby including FortGeorge Wright Army Base and Naval Weapons Station at Port Orchard. After the war, enrollment at local schools grew steadily until they reached their current level in 2002-2003.
