The shop continued to operate until it was destroyed in a fire in 1888. The next store to open in Federal Way was called The Coffee House on First Street. It served hot coffee, tea, cocoa beans, pastries and other snacks from 7am to 2pm during the day. In 1907, The Coffee House was sold to Mr. Arthur Jellinek who renamed it The Olympia Café After winning a contest sponsored by Seattle Brewing Company (later Boeing). During World War II, The Olympia Café served as a recruiting center for the military because it had a large oven used for baking donuts! In 1949, entrepreneur Roy Ritchie opened his first store called Roy's Food Emporium on Capitol Hill in downtown Seattle which became one of Seattle's biggest shopping centres!Roy's Food Emporium closed its doors in 1984 but reopened as Roy's Coffee Shop chain 10 years later! At this point, Roy had created one of Seattle's longest running coffee stores! In 2002, Roy passed away but his legacy lives on with his son Rob who continues to run the business today! Throughout the years various entrepreneurs have decided to open their own stores withinSeattle- some successful such as Bob Evans Jr., Tim Horton’s and QFC- leaving a lasting mark on Seattle’s coffee culture! In 1853, Federal Way was founded as the town ofFederal Way on the site of what is now the city of Seattle. The original name of the town was chosen to honor General James K. Polk, who had been president during the Mexican-American War and then served in Congress as a Democrat. In 1854, Federal Way became a city and was renamed after Washington Territory, which had been created in 1848. The territory consisted of all of Kitsap County east of the Strait of Juan de Fuca and north of Puget Sound. The city experienced much growth during its first few years, with construction continuing on new streets and businesses opening up along Federal Way Boulevard. However, by 1862, when Washington Territory merged into the United States as part of the Compromise Of 1850, Federal Way had shrunk back to its original size due to increasing population density in Seattle and other nearby towns. Although it continued to experience modest growth until 1870 when it reached its peak at over 100 residents per square mile (3/4 km2), federal government revenues were declining throughout most OFD era due to increased population densities inSeattle and other nearby towns making it difficult for small businesses to compete against larger companies. In addition, there was significantontentment among local citizens over high taxes levied by federal officials on businessmen and professionals living withinOFD boundaries while they enjoyed lower taxes elsewhere withinthe US government system. This ledto a series OFD backlash that culminated in a fire that destroyed mostofthe downtown business district between 1886-1887 known asThe Great FireofFederalway
