Fresh roasted coffee is a centuries old tradition in many different parts of the world. In some cases, it is even an art form. The process of roasting beans and then packaging them for shipment begins with wetting the beans, removing all hulls and debris, and allowing them to air-dry. Once they are dry, the beans are rolled into small balls and then placed in a large copper or bronze pot called a “baster”. This pot is heated until the water vapor within the beans condenses into a liquid form. This liquid is poured over the top of the dried beans and allowed to cool for about two hours. The final step in this process is to mix in hot water and stir until everything becomes combined. This mixture is then put into large brown boxes that have been previously sealed with cork boards or other material so that it will not spoil during shipping. Many times, these boxes will also be covered with metal mesh so that birds cannot get at the coffee while en route to their destinations. Once received, fresh roasted coffee must be stored at room temperature for about six weeks before being used. After that time, it can be enjoyed as soon as possible by anyone who has access to it!
