As coffee beans are roasted and ground in different parts of the world, their origins and flavors can vary greatly. In Oak Harbor, Washington, a town located on Puget Sound,artisan coffee has been enjoyed by residents for over a century. A small community of farmers and artisan roasters has helped to keep this flavor profile alive in today’s coffee culture. The first inhabitants of the area were Native Americans who hunted animals and gathered plants for food. By the early 1800s, European settlers had begun arriving in what is now Oak Harbor. One of these people was Augustus Weaver, who set up a grocery store in 1892. The first espresso machine was built at this store, which helped to create the groundwork for modern day artisan coffee culture here. Through word-of-mouth marketing and occasional business opportunities ventures such as selling flowers or eggs from carriages on Main Street, Weaver developed relationships with local roasters that would help to maintain his unique flavor profile. Over time, other members of the community began to join him in developing this style of coffee production including Harry Fryer (1904-1997), Charles Weingarten (1925-2007), Herb Kirchhoff (1945-2002) and John Ziegler (1948-2008). Today there are over 50 local roasters operating within the boundaries of Oak Harbor’s urban neighborhoods as well as downwind suburbs like Bellevue and Redmond. While some may argue thatOak Harbor’s signature style cannot be found anywhere else within its borders due to its size or lack thereof of access to specific type or roastingsochromaticspeciesofcoffeeproductsshouldbelookedfor intheshoretownofthedistrictandnotintheoutlyingvillagesarounditstobestmatchtheflavorprofileofthecommunitysofarasthatispossible; nevertheless,thefact remainsthatartisancoffeehaslongbeena vital partofthisregion’scafeteriastylecuisineandhasservedupto100percentofallpublicationsintheshoretownduringitstimeontime(Goudreau et al., 2016).
As an artisan coffee roaster, I have tasted an amazing variety of coffees over the years. Some that are well-known and enjoyed by many, while others that I am only vaguely familiar with but still enjoy immensely. One of my favorite coffees is a Silver Medal winner from Honduras, called Antigua Moka. It has a fruity taste and a slightly bitter aftertaste that is unique to this coffee. It is roasted in small batches so the flavor profile can vary quite a bit from batch to batch, making it one of the most unpredictable and exciting coffees to try. Another great Honduran coffee is called La Flor de Canoas. This coffee is dark roast with a fruity taste and a strong bitterness. The flavor Profile can be described as earthy/smoky with notes of fruit, caramel, and nuts. It takes some time to get used to this coffee since it has such different flavors but once you do, you will love it!

Robusta beans have a strong roast character that is often burnedished or roasted to perfection with a little bit of sweetness on the finish. They can be either green or black but their darkest hue usually results in their strongest flavor profile. They grow best in hotter climates and tend to have a sweeter taste than other types of Coffee Bean

Oak Harbor, Washington is a small town in Kitsap County, Washington, United States. The population was 614 at the 2000 census. It is part of the Seattle–Tacoma metropolitan area. The first Europeans to visit what is now Oak Harbor were fishermen from Holland in 1636 who went ashore on the west coast of Vancouver Island and named it "Hague" after their ship. They also noted the large quantity of oak trees that grew on the island. In 1851, when Tacoma was founded, some local men decided to move to Tacoma because they saw an opening for a new county seat near Sinclair Beach on Puget Sound. The citizens of Dutch Harbor voted not to give up their land and continue as residents of Dutch Harbor so they became known as "The Portsiders." In 1892, John Dennison built his rancho (land grant) at Hogback Bayou from what was then marshland east of present-day Oak Harbor Township. He named it Dennison Ranch after himself and donated it to the town for development into a post office, school and other uses. By 1902 there were only two houses in town and 5 people living there; by 1916 there were 20 homes with 120 people living in what is now downtown Oak Harbor. On December 3, 1914, the US government established Kettle Falls National Monument which included much of present day Oak Harbor Township including all or parts of: Hogback Bayou; Purdy Road; North Main Street; East Main Street; South Park Avenue; West Park Avenue (now portions of First Avenue). On May 1st 1923 USGS employee Cesar Chavez mapmarked off most all but 2 square miles within current city limits which today includes most if not all downtown areas including: Hogback Bayou between First Ave./West Park avenue & Second Ave./East Main street - this would include lots around future Safeco Field/Kingdome parking lot etc. So much for history lesson...!
Oak Harbor, Washington was founded in 1854 by John Addison and his wife Catharine H. Addison. The town was named after an oak tree that stood on the original site. In 1881, the town had a population of 125 people and it was renamed Oak Harbor Naval Shipyard to honor Admiral George Dewey who served as Commander-in-Chief of the United States Fleet at the time. The shipyard closed in 1951 but reopened in 1984 as a research center for Microsoft Research.
